Virgin Atlantic's culinary connections for Upper Class by Gate Gourmet

Endeavouring to always elevate the customer experience and create culinary connections that fit Virgin Atlantic’s brand promise of being Brilliantly Different, in April 2023 Gate Gourmet UK’s Executive, Chef Darren Poulton, created the following dishes for Upper Class passengers and its Pre-Select programme which has seen great success in lifting Net Promoter Scores (NPS). The menu is available on all flights from London Heathrow.

  1. Lobster and Crab Tortellini with lobster bisque, samphire, oyster leaf, finished with chive oil. A delectable, filled tortellini with lobster and crab with a rich lobster bisque coupled with samphire and oyster leaf to really set-off the flavours. This proved to be the most popular Pre-Select dish in this cycle.
  2. Togarashi Seared Halloumi Poke Bowl with confit pineapple, sesame dressed edamame, seaweed slaw & shoyu dressing. In keeping with a joint commitment to offer epicurean and on-trend dishes for those wishing to have a vegetarian meal, this delicious poke bowl was a fusion of Asian flavours built on the popularity of halloumi cheese. This lived up to Virgin Atlantic’s desire to have food that makes you feel good and also do good by reducing the carbon footprint of the total offering.
  1. Seared Lamb Rump with wild garlic and chive mash, sautéed girolles mushrooms, wilted greens & bourguignon sauce. Fitting with Virgin Atlantic’s British heritage, passengers could also choose from sustainably farmed lamb rump served with comforting wild garlic and chive mash, mushrooms and greens and all uplifted by a deep bourguignon sauce.
